The 3 capacity metrics that matter
Manufacturers describe industrial freeze dryer capacity in three related ways. Learn to read all three:
- Shelf area (m²) — the total usable drying surface. This is the most comparable number across manufacturers because it doesn't depend on your product.
- Tray count and size — e.g. 432 trays of 400×600 mm. Tray count × tray area ≈ shelf area; it also tells you about loading labor.
- Fresh loading per batch (kg) — how much raw product goes in per cycle. This depends on your product's density and slice thickness, so treat it as a guideline for a typical product, not a fixed rating.
Capacity grades: from pilot to production
| Grade | Shelf area | Trays (400×600 mm) | Fresh loading / batch | Typical use |
|---|---|---|---|---|
| Pilot / entry | ~20 m² | ~84 | ~200 kg | Recipe development, small-batch premium products |
| Mid-size production | ~100 m² | ~432 | ~1 tonne | Established brands, contract manufacturing |
| Large production | ~200 m² | ~864 | ~2 tonnes | High-volume commodity lines |
Example specifications (QS-FD series)
- QS-FD-20: 20.16 m² · 84 trays · 35 kW · 4500×1300×1400 mm · ≈200 kg/batch
- QS-FD-100: 103.68 m² · 432 trays · 135 kW · 7000×4000×2300 mm · ≈1 t/batch
- QS-FD-200: 207.36 m² · 864 trays · 135 kW · 12000×4000×2300 mm · ≈2 t/batch

Beyond capacity: what else to check
- Temperature uniformity — multi-zone independent heating control (e.g. ±0.1°C) keeps every tray drying evenly; poor uniformity means mixed batch quality.
- Lowest shelf temperature — deeper freezing (e.g. −60°C capability) handles products with low eutectic points.
- Vacuum system — combined Roots + screw pump configurations reach deep vacuum faster and run quieter than single-pump designs.
- Construction — food production demands stainless-steel chambers (e.g. SUS304) and food-grade seals.
- Controls — PLC with recipe storage and a clear HMI reduces operator error and makes cycles repeatable.
- Utilities & footprint — confirm power supply (a mid-size unit can draw 135 kW installed), floor space with maintenance clearance, and cooling water needs before you order.
- Commercial terms — warranty length and lead time. (Our standard: 1-year warranty, approx. 3-month lead time.)
Frequently asked questions
How is industrial freeze dryer capacity measured?
By shelf area (m²), tray count/size, and fresh-product loading per batch (kg or tonnes). Shelf area is the most comparable figure across manufacturers.
What size freeze dryer do I need for 1 tonne per batch?
For roughly 1 tonne of fresh product per batch you need around 100 m² of shelf area — e.g. a machine with 400+ trays. Around 200 m² handles roughly 2 tonnes per batch.
What is the most common mistake when buying an industrial freeze dryer?
Sizing by finished-product weight instead of fresh weight. Freeze drying removes 80–95% of water, so always size on fresh loading per batch.
How much floor space does an industrial freeze dryer need?
A 20 m² unit can have a footprint around 4.5 × 1.3 m; a 100 m² machine is roughly 7 × 4 m — plus clearance for loading, pumps, and maintenance access.
